A nourishing pudding rich in fibre and antioxidants. Great as a light, creamy dessert, or add some protein powder and berries for a quick and refreshing breakfast. Note: choose ceremonial or high-quality culinary matcha to avoid a bitter taste.

In a small bowl or jar, whisk the matcha powder with a tablespoon or two of the milk until smooth and lump-free.

Add the remaining milk, chia seeds, vanilla, sweetener (if using), and a pinch of sea salt. Stir well.

Let sit for 5 minutes, then stir again to prevent clumping.

Cover and refrigerate for at least 2–3 hours, or overnight, until thickened.

Stir before serving and add toppings as desired.
To increase the protein content
To turn this pudding into a more substantial, protein-rich meal, you can add:
1 scoop (20–25 g) whey protein isolate
(plain or vanilla works best)
How to add it smoothly
- Whisk the whey protein isolate into the almond or coconut milk before adding the chia seeds.
- Once fully dissolved and smooth, add the matcha, vanilla, sweetener (if using), and sea salt.
- Stir through the chia seeds and continue as per the original recipe.
This helps prevent clumping and keeps the texture creamy.
Creating the layered effect
To recreate the layered colour effect, divide the pudding mixture into three small batches before refrigerating. Leave one batch plain with just vanilla and sweetener. In the second batch, add half the amount of matcha for a soft green layer. Prepare the third batch with the full amount of matcha for the deepest colour. Once each mixture has thickened slightly, spoon the layers gently into a glass, starting with the plain layer and finishing with the darkest matcha on top. Chill until set. Create a fourth layer if you’re feeling especially creative!
