This creamy coconut and lime dipping sauce is fresh, fragrant and full of flavour. Made with simple ingredients, it’s the perfect accompaniment to chicken, seafood or fresh vegetables, adding a bright Thai-inspired twist while keeping carbohydrates low.
- Add the coconut cream, lime juice, lime zest, fish sauce, grated ginger, sesame oil and monk fruit sweetener (if using) to a small bowl.
- Whisk until smooth and well combined. If the sauce is too thick, add 1–2 teaspoons of water until it reaches your preferred consistency.
- Stir through most of the chopped coriander and spring onion, reserving a little for garnish.
- Transfer to a serving bowl and garnish with the remaining coriander, spring onion and a few thin slices of fresh red chilli.
- Serve immediately with Thai Chicken Meatballs, grilled chicken, seafood, fresh vegetables or as a dressing for a crunchy Asian-style salad.
