This is a very flexible recipe. Perfect for hot summer days when something icy cold and refreshing is needed. If you like bubbles serve as half iced tea and top up with soda water.

  • Depending on how strong you like your tea, steep 2-4 tea bags in a glass jar, pyrex container or serving jug. Add 500ml to 1 litre of boiling water.
  • Once the tea has steeped  remove the tea bags, allow to cool, then place the glass container in the fridge.
  • When ready for a cool drink, pour the iced tea into a glass filled with iced. You can add half iced tea and half soda water if you prefer bubbles.
  • A slice of lemon and a garnish of mint is perfect to dress it all up for guests.

Note: Rooibos and Vanilla tea bags are available in most supermarkets and the vanilla adds a natural sweetness. A popular brew in our house!
